If the consumption of crickets and other insects is common in Asian countries and in particular in Cambodia, the idea of consuming them still puts off most consumers in “Western” markets.
According to recent statistics, indicates the digital magazine Le Must, more than 1000 different species are consumed daily around the world and the most important markets of China, Thailand, Japan, Peru and Australia offer varieties of insects to their regular customers.
The growing demand for nutrient-rich foods that respect the environment, combined with the increase in the world population and the scarcity of natural resources means that the so-called “western” markets now consider the insect as an attractive alternative. However, according to analysts, the magazine notes, the acceptance of insects in “Western” plates will undoubtedly pass through a powder form which will put off those who don’t like these little beasts a little less!
